Greengage (Plum) Cake

In keeping with the current plum theme: A different kind of plum cake, using shortcrust pastry and some kind of pastry cream.

I used greengages, a cultivated plum, also known under the name Reine Claudes. Any kind of plum will work.



use a round cake tin, 26 cm across


 300g flour

 200g unsalted butter

 100g caster sugar

 pinch of salt




 60g ground almonds

 750g greengages, pitted

 3tbsp creme fraiche

 100g sugar

 2tbsp flour

 3 eggs


Preheat the oven to 180 C. Make the shortcrust pastry, leave to rest in the fridge for at least an hour. The pastry in this recipe is very brittle, so instead of rolling it out, simply press it into the lined cake tin. Prick with a fork.

Sprinkle with gound almonds, then place the pitted and halved greengaes on top.

Beat together creme fraiche, sugar, flour and three eggs, then pour over the plums.

Bake for 40 – 45 minutes in the preheated oven.
