Plum Tray Bake

Tray Bakes are a very German tradition. The clue lies in the name, a tray bake is a cake baked one a large rectangular sheet. The list of recipes is endless, they can be made from various kinds of dough. My favourite have always been yeast dough based tray bakes. Come late summer early autumn the yeast dough gets topped with plums or apples. If you so desire finish off with crumbles or streusel, or just enjoy German style and serve with whipped cream.

500g wheat flour

10g dry yeast

1 tsp vanilla sugar (optional)

75g sugar

pinch of salt

250ml warm milk

75g butter, soft

ca 1 kg plums



75g butter

60g flour


60g ground almonds


Make a yeast dough.

Leave to rise until it has doubled in size. Knead on the work top, then roll out the dough on a parchment
Make streusel: rub all streusel ingredients together, then sprinkle on top of the cake.lined baking tray. Halve and stone the plums and evenly distribute on the cake. Leave to rise.

Bake in the pre heated oven at 200 C for 25 minutes.
